Hi, I’m Katie Nabors, a performing artist, educator, and Registered Dietitian. I founded Northcoast Nutrition in 2022 with the mission of providing nutrition consulting and education to high performance individuals.
I believe food can be used to fuel the body for optimal physical performance and to nourish the mind to maximize intellectual performance.
My goal is to teach and empower individuals to properly fuel and nourish themselves whether it be for cognitive and intellectual performance in the workplace or physical performance on the field, court, or stage. I provide nutrition counseling and group education with a food-first approach that’s balanced and works in harmony with each person’s unique lifestyle and needs.
I earned my Masters of Science degree in Nutrition and my Masters of Fine Arts degree in Contemporary Dance from Case Western Reserve University in Cleveland, Ohio and completed my clinical dietetics work at the University of North Carolina.
I am currently an adjunct professor at Case Western Reserve University within the School of Medicine in the Department of Nutrition and the College of Arts & Sciences in the Department of Dance.

what is your favorite Meal?
My ultimate favorite meal is grilled Idaho rainbow trout, a side of smashed roasted redskin potatoes with fresh dill, garlicky green beans, and a glass of crisp sauvignon blanc OR coconut green curry with jasmine rice, tofu, mushrooms, and red bell peppers. My favorite stand alone foods are dill pickles, avocados, and clementines.
What is your favorite way to exercise?
I love dance with my whole heart. I have been dancing since I was 6 years old and it is my favorite form of movement, expression, and art. I truly enjoy distance running, and I run about 1-2 half marathons per year. I also enjoy swimming, SUP’ing, kayaking, yoga, and hiking are among some of my favorite activities.
What are your go to SNACKS ?
Smoothie with vanilla protein powder, non-dairy milk, raspberries, and cashew butter
Nut butter, apples, and pretzels
Hummus with veggies (carrots, cucumber, and celery)
Dried mango slices, dill pickles, and toast with peanut butter
